Peanut Sauce Tofu With Coconut Rice

Ingredients:

0.5 cup smooth peanut butter
1 cup full fat coconut milk
2 tablespoons low sodium soy sauce (tamari for gluten free)
1 tablespoons maple syrup
2 teaspoons fresh grated ginger
2 garlic cloves, minced
2 tablespoons fresh lime juice (about lime)
3 handfuls greens like kale, spinach, or swiss chard (optional)
2 cups Simple Crispy Tofu (Protein Base)

Directions:

In a large pan, add all the sauce ingredients and turn the heat to medium. Stir constantly, until smooth and creamy, about 3-4s minutes.

Add thawed Simple Crispy Tofu to the pan with the sauce, and stir to coat. Keep over heat until Simple Crispy Tofu is warmed through. Serve immediately over {rice}, or {coconut rice}. Sprinkle peanuts and cilantro on top, if desired.

3.

Add quick {sauteed greens} if desired, sauteing them in the same pan to soak up peanut sauce flavors.
